Well here at Quest, we put our best people on the case, and we fixed what was wrong. Here are lemon poppyseed pancakes made with – yes – Quest Lemon Bars. Rejoice, because your pancakes now have a lemony, protein flavor.

Ingredients
LEMON AND POPPY SEED PANCAKES
Method
- In a large bowl, combine almond flour, baking powder, salt, protein powder and poppy seeds.
- In a microwave-safe bowl, add chopped Quest Bar and almond milk.
- Microwave on high for 30 seconds and stir gently (there will be a few lumps that won’t melt) then let cool for 1-2 minutes.
- Stir in eggs, butter and zest. Add the wet ingredients to the dry ingredients and stir until combined.
- Let the dough rest for 10 minutes.
- Heat a pancake griddle to 325 F or skillet over low-medium heat.
- Spray with nonstick spray and cook pancakes about 1/3 cup at a time until golden brown, about 2 to 3 minutes per side.
- Serve hot with your favorite syrup.
