Questified Charged Onion Rings | quest blog

Confession time. There’s only one thing we love more than fries. It’s onion rings. Crazy for them. So when we got wind that there was something related to cooking rings in the Quest™ test kitchen, we sent a strongly worded instant message asking for more information. That’s what we learned. Onion rings loaded with Quest Loaded Taco Flavor Tortilla Style Protein Chips are very real. They are easy to do. They are delicious. We are eating them as we write this and making a big mess.

NUTRITIONAL INFORMATION

QUESTIFIED LOADED ONION RINGS

Yields: 4 servings | Portion: 21/4 onion rings, assembled

calories: 390 | Protein: 31g | Fat: 23g | net carbs: 13g

Total carbohydrates: 13g | Sugar: 5g

Ingredients

QUESTIFIED LOADED ONION RINGS

  • 2 bags Quest Loaded Protein Taco Chipscrushed
  • 3 tablespoons gluten-free flour
  • 2 eggs, beaten
  • 1 large yellow onion, slipped into ½-inch rounds
  • ½ lb ground beef, lean
  • ½ tablespoon of olive oil
  • 1 teaspoon chilli powder
  • 1 teaspoon of cumin
  • Salt and pepper to taste

Cheese Sauce:

  • 1 tablespoon of butter
  • 2 tablespoons heavy cream
  • 2 tablespoons almond milk, unsweetened
  • ¾ cup cheddar cheese

Toppings:

  • 1 romaine tomato, diced
  • 2 tablespoons green onions, sliced

Method

  1. Preheat the oven to 375 F and prepare a baking dish with parchment paper.
  2. Place crushed fries, flour and eggs in their own shallow bowls.
  3. Coat each onion ring with flour, then in the beaten egg and finally coat with crushed chips.
  4. Place each coated onion ring on the baking sheet about 2 inches apart.
  5. Cook the onion rings for 7-10 minutes and brown them.
  6. While the onion rings cook, heat a skillet over medium-high heat and cook the beef with the olive oil and seasonings until cooked through, about 7 to 8 minutes.
  7. Prepare the cheese sauce by placing the ingredients in a skillet over medium heat. Whisk until melted and smooth.
  8. Assemble onion rings on a serving platter and top with cooked beef, cheese sauce and toppings and serve.
